Shredded Chicken Nachos

I was asked for my recipe for the Chicken Nacho’s from last night. This is the one I usually use:

Shredded chicken for nachos

**1 tablespoon garlic oil
2 lbs boneless chicken
Cut chicken into chunks

1 tsp chili powder
1 tsp cumin
1/2 tsp paprika
1/4 tsp oregano
1/2 cup fresh cilantro (I use dried most of the time – 1 tsp)

Juice of 2 oranges – I use a cup of OJ when I’m feeling lazy
Juice of 2 limes
(Need about 1 cup liquid)

Sauté chicken briefly in cooker with garlic oil and pepper.
Add spices and juice

Pressure cook for 12 minutes. Wait 10 minutes and then release the rest of pressure. Shred in the pot with two forks or tongs (the liquid adds flavor and keeps the meat juicy, I just use tongs to  pull it out of the pot to layer on the tortilla chips and it’s not too wet)

Serve on chips with melted cheese, tomatoes, green onions

**I’m not supposed to eat garlic on my diet so I use a little garlic oil to get the flavor – luckily it’s not solvable in oil so it doesn’t effect me like eating garlic does.

Last night, I decided to go easy and used a package of Taco seasoning in place of all the spices rather than buying them here. I also used OJ instead of squeezing the oranges. I did not sauté the chicken in garlic oil either since I don’t have any here.  It still tasted great!
