I’m always looking for good things (easy things) to add to our meal rotation, especially since I’m cooking so often with Keith at home and not traveling due to COVID. This week we tried two new recipes for the Instant Pot and they were both good. Last night I fixed a Chicken Corn Chowder. There was a bit of chopping involved but that’s my favorite part of cooking so I don’t mind and it didn’t really take that long. It was really yummy! I asked Keith to pick some crackers that would be good with it and these were perfect. I know some people don’t think of soup as a meal by itself but it’s a hearty soup with plenty of meat and veggies and it was all we needed!
I didn’t take a photo of the Beef Stroganoff but it was good too and we’ll have both meals again. Here’s the recipe link if you want to check it out. Instant Pot Beef Stroganoff
