What’s for dinner

I’m always looking for good things (easy things) to add to our meal rotation, especially since I’m cooking so often with Keith at home and not traveling due to COVID. This week we tried two new recipes for the Instant Pot and they were both good. Last night I fixed a Chicken Corn Chowder. There was a bit of chopping involved but that’s my favorite part of cooking so I don’t mind and it didn’t really take that long. It was really yummy! I asked Keith to pick some crackers that would be good with it and these were perfect. I know some people don’t think of soup as a meal by itself but it’s a hearty soup with plenty of meat and veggies and it was all we needed!

  1. I love chicken corn chowder, it is a full meal. I haven’t used my instant pot much at all. I kind of link it with canola oil. I don’t think it develops the full flavor of what I am cooking. I used to make carrot cake all the time. I started using canola oil because they said was healthier. But we noticed my cakes weren’t the same. Went back to vegetable oil and my cakes were great again. Each time I used my Instant Pot, the flavors weren’t there. I’ll try your soup recipe sometime when I get back from our vacation. It looks delicious.

  2. Yum!! I love a good chowder. And I also love stroganoff, but my picky eater husband does not. I actually have tried a couple of new recipes lately – with mixed success. I’m so sick of cooking!

  3. That looks yummy. Used our slow cooker to make butter chicken for 8 people this week. It was yummy too. Use the cooker another in the winter. Made delicious apricot and capsicum chutney too part of my Christmas gift making.

  4. Soup is a meal in our house 🙂 try to make the bread but sometimes just heat up some rolls and call them the side dish. The downside to COVID is now I am home all the time and so home in time to make dinner. It used to be my husband who was home in time to make dinner.
